After making lemon dandelion cookies, I won't think of a dandelion as a weed. These cookies are yummy. Every part of the dandelion is edible including the root. Dandelions are high in vitamin A, B, C, D and K. They contain potassium, zinc and iron. You can make a tea with the root that is very healing as a mild laxative and a digestive aid.
Dandelions help kidneys clean waste, they are high in antioxidants, they help manage cholesterol and boost immune function. Here's the recipe.
1/2 cup coconut oil
1/2 cup agave, honey, maple syrup or sugar
2 eggs
1 cup flour
1 cup oats
1/2 cup dandelion petals (only the yellow flower, no green or stems)
10 -12 drops Young Living lemon essential oil
Bake at 350 on pan well coated with coconut oil for 10-12 min.
